Most online casinos use a lot of the same casino games platforms as each other. Below, I've got a screenshot of each type of caribbean stud software that I've run across along with what I think are a couple of the best casinos that use that software.
One thing that I will list between the different software companies is the payout structure they use for progressive bets. This is the one thing that you will find that is different between online casinos. The other a few do not offer progressive betting at all.

As you can see if your looking hard enough, 5dimes casino is one of the only 21Gnet casinos I've ever played at. 5Dimes is currently allowing new players from the United States.

Cryptologic Caribbean Stud Poker

Casinos that use Cryptologic software do not allow players for the U.S. It may look like you have multiple places to bet, but you can only place a bet on the middle spot.
One of the great things I like about this software is the Auto-Bet feature. This feature has tons of ways that you can preset how you want to bet. This includes Fixed betting or betting the same amount on each hand, Pattern betting where you can set up from 2 to 15 bets to be done in order, and Conditional betting where you can increase or decrease your bet depending on whether you win or lose.
The regular payout is slightly different than normal. The Royal Flush pays out 200:1 on a regular bet instead of 100:1.

Microgaming Cyberstud Poker

Microgaming calls their version of this game "Cyberstud Poker." Call it what you want, but it is still played the same way are caribbean stud. Although this version does not show it, you can play a progressive jackpot version of Cyberstud.
There raise payout structure is much different than traditional caribbean stud, this is probably because they don't want to infringe on any patent rights. Again, you may think you can bet on more than one spot, but you can only bet on the middle.

Net Entertainment Caribbean Stud Poker

Net Entertainment makes flash games for online casinos such as CasinoEuro and Betsson. Betsson was nice enough to let me host their Oasis Poker flash game, so you can check out the basics about their software.
You can see the progressive jackpot listed in Euros right above the Jackpot bet. They also have a 200 to 1 payout for a Royal Flush.

Playtech Caribbean Stud Poker

One of the cool things about Playtech's software is that I don't have to list their payouts. Everything is clearly marked on their table itself. If you are from the US, you can play for real at Playtech casinos. You have the option of playing for free, but you will not get to play the progressive jackpot version.
The one very cool feature that Playtech has if you are playing for real is the option to play at multi-player tables and you can have your own private caribbean stud table as well.
The two best Playtech casinos hands down are Bet365 and Golden Palace.
Rival Gaming Caribbean Stud Poker

Rival Gaming software is download and install only as they offer no flash games. I think this Caribbean Stud may have been an afterthought for Rival as there is not much in the way more than what you see here.
One thing that you will notice about Rival gaming is that there is no progressive jackpot, nor any progressive betting. I almost wouldn't call this caribbean stud because of this, but it follows the exact same rules otherwise. The raise payout structure appears to be the same. I say appears because I can't find the payout table to check anything higher than a full house that I've gotten once.
Online casinos that use Rival Gaming software include DaVinci's Gold and This is Vegas. These casinos no longer accept U.S. customers.
Real Time Gaming Caribbean Stud Poker

There are two different versions of Real Time Gaming software that I have to show you. Above is a screenshot of the download version of an RTG casino, in this case Rushmore. All RTG casinos accept customers from the United States.
I like the skull and crossbones progressive coin slot, as well as the traditional palm trees and treasure chest found on most actual Caribbean tables at the casino. When you click on the progressive coin slot, a dollar chip goes into the skulls mouth. When you press deal, the skull swallows the coin.
The progressive payouts for RTG casinos are as follows:
Royal Flush - 100% of Jackpot,
Straight Flush - 10% of Jackpot,
Four of a Kind - $500
Full House - $100, Flush - $75

This screenshot shows what RTG's flash games look like. Much simpler and much more compact. You can't see this because I've changed the sizes, but the flash screen is about half of the size of the casino download version.

Vegas Technology Caribbean Stud Poker

Vegas Technology, last alphabetically but one of my favorite versions of Caribbean stud to play.
Obviously, you can bet on all five locations and play 5 progressive bets at the same time. Better yet, you get to see all of your cards at the same time.
You have a total of 25 cards of your own that you can see plus one of the dealer's cards. That means you are seeing half the deck. In the case above, the 3 was showing. By looking at my hands, I could see that two of the 3's are gone, giving me a slight advantage.
If the dealer's up card is not matched by any of your 25 cards, you better believe there is a big chance that the dealer's got a pair.
Vegas Technology was also nice because they too put the Progressive Payouts clearly on their table.
